White Wine sauteed Calamari

Main Course.... LOBSTER Mac&Cheese and Panko Encrusted Link Cod (fresh caught)

So, I'm sitting home on a 'sick day' (funny how cold weather mixed with working around dozens of sick teends makes me feel under the weather), and I need something to eat. But do I have to crack open a can of soup like most guys?
NOPE!
All ready in the fridge is a turkey already carved, perfect for making a sandwich. And homemade cranberry sauce, which brings us to todays "Yummy Item of the Day"!

Welcome to "Confessions from the Test Kitchen"
It's said that the way to a man's heart is through his stomach. If my wife didn't already hold the deed to my heart, this new role of mine would have definitely sealed the deal.
Let me explain. We welcome you to "Confessions from the Test Kitchen"... my journey through the greatest honey-do list a husband was ever assigned by his wife. My name is Dino, and I'm a high school teacher by day, professional photographer by night. That's not what's important. What IS important is that my wife (AKA Chef Marguerite) is an Amateur/Professional Chef.
"Woooaw, wait a minute Dino..... aren't those two mutually exclusive terms?"
Yes, they are. But this is my Blog, so I get to explain what I mean. Amateur = she doesn't work as a chef to make a living. It's a passion. Professional = her knowledge and skill in the kitchen rivals many professional chefs I know (and I've known a few).
OK, as I was saying... what do I have to do with all this? Guys listen up, and be prepared to eat your heart out (ahem). It's my job to taste test all her new experiments and creations.
"Dino, can you come taste this seafood bouillabaisse?"
"Dino, can you tell me what you think of this prime rib?"
"Dino, I'm thinking of ginger sorbet.... can you taste these versions for me?"
That's right folks, my JOB is to eat every new creation out of the kitchen of a culinary genius. This blog will tell you all about the wonderful things I get to try, as well as her new recipes, experiments, trials and tribulations. If you're a foodie.... THIS is the blog for you.
